A determined individual, he went from working in commercial kitchens for 15 years to appearing on his own TV shows while running a successful hospitality business and developing native Australian products line.

On Country Kitchen, Olive is joined by Derek Nannup, a Noongar man from Western Australia who acts as his sidekick and finds indigenous ingredients while Olive instructs on how to prepare them. Together they form an excellent team, sharing a similar gastronomic philosophy.
